Menu Planning Monday!

Well, somehow it is August already! Where is the summer going? July was a hot one here in DC with temperatures in the 90′s almost everyday. We also had a few days of 100 degrees with lots of humidity. I’m sure August will be more of the same but that’s okay- we plan to spend as many weekends in the pool, as we can. Before we know it it will be Labor day and the base pool will close. Anyway, I digress. Here is what the Stavish family will be eating this week.

Sunday Halftime Chili and sweet potatoes

Monday- Leftover Chili (Xander and mommy will be meeting the girls from work at Screen on the Green for a last get together for Laura who will be moving to Chicago at the end of the week.)

Tuesday-Tortellini Bake and broccoli

Wednesday- Chicken Enchiladas (I cook the chicken in the crock pot during the day so it falls apart for the enchiladas) and Cheesy Cauliflower

Thursday- Almond Crusted Salmon and Spinach Bars (I had these on the menu last week but never did make them.

Friday and Saturday- Out

I also plan to make zucchini bread at some point this week. It will be my first time ever making it. It just seems odd that a veggie is the premise of the bread but it always tastes so good when I have it somewhere. I do plan to do 1/2 white flour and 1/2 wheat flour and probably substitute the vegtable oil with applesauce to make it more healthy. Also I’ll throw in some wheat germ an added bonus.
