Last week was a bit of a bust for meal planning. The weather was beyond amazing and I didn’t feel like spending the evenings cooking and cleaning up. I abandoned my plan and went for super easy— like boil some pasta and heat up some frozen meatballs kind of easy. Not only did we get to enjoy some time outside after dinner, but I have half of my menu planned for this week from last week’s recycled menu.
Monday: Chicken Rollatini with Spinach Alla Parmigiana served with Wagon Wheel Pasta
Tuesday:Broiled Tilapia With Thai Coconut Curry Sauce and Jasmine Rice
Wednesday: Grilled Hamburger Sliders
Thursday: Oodles of Orzo Zucchini Bake
Sunday: Baby Shells with Asparagus
