As I was planning the menu this week I asked Adrian if he had any suggestions for meals this week. Every so often he will request one of his favorites. This week he told me that he wasn’t sure how I was going to top last week. Somehow I managed to plan multiple pasta related dishes, which I rarely do. We love pasta and honestly could eat it every night of the week. I try to only put it on the menu once during the week. More often than not we go out to eat and have Italian during the weekend. So this week I’m up for my husband’s challenge and have nothing but new recipes to try. One of my favorite “don’t-need-a-cookbook” recipes is Chicken Parmesan. It tends to be such a messy dish to make though. By the time I’m done making it the kitchen is usually covered with sauce and the sink is overflowing with dishes. I’m excited to try a new way to make it this week, in the slow cooker. Fingers crossed it turns out just as well.
Sunday: Italian Wedding Soup with Sandwiches of your choice
Monday: Pork Chops and Potatoes with Broccoli
Tuesday: Applesauce BBQ Chicken and Smashed Sweet Potatoes
Wednesday: Hamburger Sliders and Oven Fries
Thursday: Slow Cooker Chicken Parmesan and Salad
Friday: Fed for yourself because mommy has a party to set up
Saturday: Pizza Out or order in after Xander’s birthday Party

Dessert time at a Chinese Buffet
This week I am making two new recipes, a mexican chicken enchilada casserole and a Thai Noodle dish, both from the Meal Makeover Mom No Whine with Dinner cookbook. Would you believe I still haven’t made all of the recipes in the book? We have our favorites that I tend to make over and over again. I even have a couple of the recipes memorized. This shocks me considering just a few years ago I wouldn’t even think to make any other meal than one from a box. I am excited to try something new! Speaking of new I made Peanut Butter Pancakes (from the Meal Makeover Mom’s) this past Saturday. They were really good. I love discovering new pancake recipes! These are packed with nutrient rich ingredients. I always make a double patch of pancakes, so I can pack Xander pancakes for breakfast during the week. These will be going into the recipe rotation!
Monday: Pad Thai with Chicken
Tuesday: Slow Cooker Beef Stew
Wednesday: Whole Enchilada Bake with Spanish Rice
Thursday: Slow Cooker Maple Ham and Scalloped Spuds with Broccoli (using baby red potatoes instead of frozen)
Friday: Kid Friendly Quiche (using leftover ham instead of sausage and broccoli instead of zucchini)
Saturday: Out
Linking up to Laura at I’m an Organizing Junkie for another week of delicious meals. This week she has some great ideas for meal planning for the family with picky eaters. On any day of the week Xander can be quite the picky eater himself. It can pretty discouraging when he doesn’t touch anything I put on his plate even though he would probably like it if he would just try it! I know my hard work in introducing him to new foods will pay off some day down the road. Like I tell Adrian when they are teenagers there won’t be any leftovers!
