As a mom of two active little boys, I’m always looking for ways to make packing lunches and snacks more streamline. Meet my new favorite product that does just that- PackIt Personal coolers. Just last week, I started using the PackIt to bring my lunch on the road. Since I now work out of my car as a traveling Speech-Language Pathologist, packing my lunch has become such a chore.  I no longer have an office to go to never mind a fridge.  I have struggled with keeping my lunch and snacks cold enough throughout the day.  I was more than impressed with the PackIt. My yogurt stayed cold all day and I was able to enjoy it after my 4:00 pm patient, on my drive home.

My most recent genius idea for the PackIt has been to store Noah’s cup of milk by my bed, in case he wakes up. I know super lazy, right? Being 28 weeks pregnant and getting larger by the second, I think I am entitled to some sort of laziness when my almost 2 year-old still wakes up in the middle of the night every now and then for his milk.

Honestly, I think the personal cooler is going to be a life saver this late summer/early fall when I head back to work after maternity leave. Since I will be pumping in the car between patients, I plan on using a PackIt personal cooler to keep my pumped breastmilk cold and safe.

Yesterday I received a large box full of sauces from WORLDFOODS, as part of the Fusion Taste Team USA Campaign. Over the next six weeks, I will be cooking with and reviewing WORLDFOOD’s all natural ingredient Asian sauces. I have been searching for sauces that do not contain contain artificial preservatives, colors, flavors, gluten or genetically modified ingredients for quite some time.  I am  excited to try these sauces out.

What is not fun is trying to cook a decent meal after a long day at work, when your 3 year old and 18 month old are starving and want to be fed RIGHT NOW! After daycare snacks do not hold these guys over, so I need quick and easy meals, on nights when we get home late.

Tonight was one of those nights. Thankfully I already planned to make Tilapia tonight, but wanted to do something different. I quickly scanned through my WORLDFOODS sauces and selected the Thai Cambodian Pineapple Lemongrass Sauce. As I started dinner, I plopped both boys up on the counter and we got to work.

Within 15 minutes I had dinner on the table. Noah clapped when I set his in front of him. I love this kid!

A mere five minutes later, Noah’s plate was licked clean (seriously he licked it!). Xander finished his dinner in record time too. A win for mommy tonight!
